  • 4 cup grape or cherry tomatoes
  • 1 shallot, sliced
  • 2 cloves,of garlic, minced
  • 1/4 tsp black pepper and salt to taste
  • 1/4 tsp red pepper flakes
  • 1/2 tsp Italian dry seasoning bnb
  • 1 tbsp chicken broth
  • 1 tbsp cream, heavy, light or half and half. I used heavy
  • 12 thin slices of pepperoni
  • 8 oz ltalian 5 cheese blend, shredded
  • 1/4 cup fresh chopped parsley

    Preheat oven to 450.

    Spray a baking dish dish with non stick spray

    In a large skillet on low heat cook pepperoni until.crisp, remove to paper towels to drain

    In skillet pepperoni was cooked in add tomatoes, shallot, garlic, salt, pepper, red pepper flakes and Italian seasoning.

    Cover and cook on medium, stirring often until tomatoes are tender but still.hold their shape, about 10 to 15 minutes

    Add broth and cream and bring just to a simmer, then remove from heat and transfer to prepared baking pan

    Evenly top tomatoes with the cheese then.parsley and pepperoni.

    Cook in hot oven just until cheese melts a about 5 minutes

    This dish can be served as a side vegetable, or as an appetizers with crisp bread rounds to spoon it on.
