Plum Bread Pudding

- 6 None slices white bread, quartered
- 2 tbsp butter
- 3 tbsp plum jam
- 2 (12 oz) cans evaporated milk
- 3 large eggs
- 1/3 cup sugar
- 1 tsp vanilla extract
- None None whipped cream, to serve
Directions

1Preheat oven to 350°F. Lightly grease a 6-cup ovenproof dish.

2Spread each slice of bread with butter, then jam. Place in prepared dish, slightly overlapping.

3In a bowl, whisk together evaporated milk, eggs, sugar and vanilla. Pour over bread. Set aside for 10 minutes until some of the mixture has soaked into the bread.

4Place dish in a large baking pan. Pour in enough boiling water to come halfway up sides of dish.

5Bake for 25-30 minutes until custard is just set when tested. Cool for 5 minutes before serving with whipped cream.
