Pop'S Gourmet Rice Pudding

- 1/2 c. uncooked, enriched long grain white rice (not instant)
- 3 c. boiling water
- 1/2 tsp. salt
- 14 oz. can sweetened condensed milk
- 1/2 c. raisins (if desired)
- 1/4 c. butter or margarine
- 1 Tbsp. vanilla
Directions

1In top of double boiler, combine rice, water and salt.

2Cook over medium heat about 40 minutes or until rice is tender.

3Do not drain.

4Stir in condensed milk, raisins and butter.

5Cook, stirring frequently, until slightly thickened, about 20 minutes. Remove from heat.

6Add raisins and vanilla.

7Serve warm or cold. Serves 6 to 8.
