Poppy Seed Cake

Ingredients

  • 1 yellow cake mix (do not get mix with pudding in it)
  • 1 small box instant vanilla pudding
  • 1/4 c. poppy seed
  • 4 eggs
  • 1/2 c. oil
  • 1 c. plain or vanilla yogurt or 1/2 c. sour cream and 1/2 c. sherry
  • 1/2 c. chopped pecans or black walnuts (optional)
  • powdered sugar for topping

Directions

    Mix the dry ingredients:

    cake mix, pudding and poppy seed. Add the eggs, oil and yogurt and mix well with a mixer.

    Add nuts and fold in by hand.

    Pour the mixture into a greased Bundt or tube pan; bake at 350° for 50 to 60 minutes.

    When cool, sift powdered sugar on top.
