- 1/4 c. margarine
- 1/3 c. sugar
- 1 egg white
- 1/2 tsp. vanilla extract
- 1 1/3 c. sifted cake flour
- vegetable cooking spray
- 1/2 c. powdered sugar
- 1 Tbsp. unsweetened cocoa
- 2 Tbsp. water
Directions

1Cream margarine in small bowl.

2Add 1/2 cup sugar, beating at medium speed with mixer until light and fluffy.

3Add egg white and vanilla; beat well.

4Gradually add flour to mixture; stirring until blended (dough will be stiff).

5Wrap dough in heavy plastic wrap and freeze 10 minutes.

6Shape dough into 1-inch balls, place 2 inches apart on cookie sheet.

7Press thumb into each.

8Bake at 375° for 10 minutes.

9Remove and cool.

10Combine powdered sugar, cocoa and water; stir well.

11Spoon 1/4 teaspoon into each cookie center. Yields 2 dozen.
