- 1 tablespoon vegetable oil
- 1 onion
- 1/2 red bell pepper
- 2/3 pound porcini mushrooms
- 3/4 cup short grain rice
- 2 9/16 cups chicken stock
- fresh thyme
Directions

1Add the oil to a saucepan on medium heat. Add the onion and bell pepper and saute.

2Once softened, add the mushrooms and saute for 4 minutes.

3Add the rice and saute a few minutes.

4Add the chicken stock and a pinch of thyme and cook on low heat 18 minutes.

5Serve warm.
