Porcini Rice

  • 1 tablespoon vegetable oil
  • 1 onion
  • 1/2 red bell pepper
  • 2/3 pound porcini mushrooms
  • 3/4 cup short grain rice
  • 2 9/16 cups chicken stock
  • fresh thyme

Directions

    Add the oil to a saucepan on medium heat. Add the onion and bell pepper and saute.

    Once softened, add the mushrooms and saute for 4 minutes.

    Add the rice and saute a few minutes.

    Add the chicken stock and a pinch of thyme and cook on low heat 18 minutes.

    Serve warm.
