  • 8 hard-boiled eggs
  • 1 can stewed tomatoes
  • 4 Tbsp. butter
  • pinch of parsley, chives and basil
  • 2 Tbsp. flour
  • 1/2 c. tomato juice
  • 1 c. milk, scalded
  • 1/2 c. Cheddar or Gruyere cheese, grated
  • 2 Tbsp. butter

Directions

    Cut eggs in half lengthwise.

    Put yolks in bowl and thoroughly blend with 4 tablespoons butter, herbs, salt and pepper to taste. Spoon the mixture into the egg whites.

    Spread tomatoes over the bottom of a baking dish and place stuffed eggs on them.

    Melt 2 tablespoons butter and stir in the flour.

    Cook and stir for 3 minutes.

    Add the tomato juice and milk.

    Stir and cook until smooth and thick.

    Pour around and over the eggs.

    Sprinkle with cheese and bake at 350° for 20 to 25 minutes until brown and bubbly.
