- 8 hard-boiled eggs
- 1 can stewed tomatoes
- 4 Tbsp. butter
- pinch of parsley, chives and basil
- 2 Tbsp. flour
- 1/2 c. tomato juice
- 1 c. milk, scalded
- 1/2 c. Cheddar or Gruyere cheese, grated
- 2 Tbsp. butter
Directions

1Cut eggs in half lengthwise.

2Put yolks in bowl and thoroughly blend with 4 tablespoons butter, herbs, salt and pepper to taste. Spoon the mixture into the egg whites.

3Spread tomatoes over the bottom of a baking dish and place stuffed eggs on them.

4Melt 2 tablespoons butter and stir in the flour.

5Cook and stir for 3 minutes.

6Add the tomato juice and milk.

7Stir and cook until smooth and thick.

8Pour around and over the eggs.

9Sprinkle with cheese and bake at 350° for 20 to 25 minutes until brown and bubbly.
