  • 2 1/2 lb. beef chuck roast
  • salt and pepper
  • 3 medium baking potatoes (unpeeled), quartered
  • 2 large carrots, sliced
  • 2 large celery stalks, sliced
  • 1 medium onion, sliced
  • 2 bay leaves
  • 1 tsp. dried rosemary
  • 1/2 tsp. dried thyme
  • 1/2 c. beef broth

    For each cup of broth, mix 1/4 cup cold water and 2 tablespoons flour. Mix until smooth and add to boiling broth, stirring constantly. Cook 1 minute or until thickened.
