  • 1 potato, boiled until done
  • 4 or 5 Tbsp. butter
  • salt (pinch)
  • 1 tsp. vanilla
  • powdered sugar (enough to make stiff dough)
  • peanut butter

Directions

    Boil a potato in skin until done.

    Peel and mash well.

    Add butter, salt and vanilla.
  4. 4
    Add enough powdered sugar to form a stiff dough.

    Divide in half or quarter and roll thin between two pieces of waxed paper.

    Spread with peanut butter and roll like a jelly roll.

    Wrap in waxed paper and place in refrigerator.
