- 2 lb. Russet potatoes
- 1 1/2 c. dairy sour cream
- 1 1/2 c. shredded Swiss cheese
- 1 carrot, shredded
- 1/4 c. minced onion
- 2 Tbsp. minced parsley
- 1 tsp. salt
- 1/8 tsp. pepper
- paprika
Directions

1Cook potatoes in jackets until tender.

2Peel and shred. Combine potatoes with sour cream, 1 cup of cheese and remaining ingredients except paprika.

3Turn into buttered 1 1/2-quart baking dish.

4Sprinkle with remaining cheese and paprika.

5Bake at 350° for 30 to 40 minutes.
