Ingredients
- 1/4 lb. bacon
- 1/2 c. chopped onion
- 2 to 3 c. diced potatoes
- 1 c. sliced fresh carrots
- 2 c. boiling water
- 1 1/4 tsp. salt
- 1/4 tsp. sage
- 1/8 tsp. pepper
- 1/4 tsp. paprika
- 2 Tbsp. flour
- 2 c. milk
- fresh parsley
Directions

1Cook bacon in large skillet until crisp.

2Remove, drain and crumble.

3Saute onion and carrots in fat.

4Drain all but enough fat to make a smooth mixture with 2 tablespoons flour.

5Add flour, stir and cook for a few minutes until browned.

6Add potatoes, water and seasonings.

7Simmer until potatoes are tender.

8Add milk.
-
9Reheat until hot.

10Mash with potato masher if desired. Sprinkle bacon bits on top and garnish with parsley.

11Serves 6.
