  • 4 c. hot mashed potatoes
  • 8 oz. cream cheese
  • 1 egg, beaten
  • 2 Tbsp. butter
  • 12 sliced green onions
  • 2 Tbsp. diced pimento
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions

    Combine mashed potatoes, softened cream cheese and butter. Add remaining ingredients and place in an oiled casserole dish. Bake at 350° for 45 minutes. This will puff slightly as it bakes. Casserole may be refrigerated or frozen and baked later. Increase baking time accordingly.
