Potato Dumplings

- 3 1/2 c. boiled, riced potatoes
- 2 eggs, lightly beaten
- 1 tsp. salt
- 1 c. flour
- 1 Tbsp. onion, grated
Directions

1Cool potatoes. Add eggs, salt, flour and onion.

2Mix and knead lightly until smooth. (Add more flour if dumplings fall apart.) Shape into long thick roll. Cut in small pieces.

3Roll each piece into a dumpling. Cook in rapidly boiling salted water until they rise to the top. Simmer a few minutes longer until cooked through to center. Drain.

4Pour browned butter with onions over them.
