Potato Dumplings

- 1 c. flour
- 1 tsp. salt
- 1/4 c. farina
- 1 egg, slightly beaten
- 2 Tbsp. milk
- 5 medium sized potatoes
Directions

1Boil potatoes in their jackets.

2Cool, peel and rice (about 2 1/4 cups).

3In a large pot, have boiling water ready.

4In a mixing bowl combine potatoes, flour, salt, farina, egg and milk.

5Mix thoroughly until smooth.

6Dust hands with flour.

7Form into balls about 1-inch in diameter.

8Drop dumplings into rapidly boiling water.
-
9Boil gently again.
-
10Simmer the dumplings for about 10 minutes or until they rise to the top.

11Makes about 12 to 14 dumplings.
