- 1 cup flour
- 3 eggs
- 1/4 cup Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 3 -4 cups instant potato flakes (or buds)
- 1/4 cup oil (for frying)
- 12 (4 -6 ounce) tilapia fillets
Directions

1In a shallow dish, whisk together the egg, mustard, and salt and garlic powder; set aside. (I place in fridge for 15 minutes to blend flavors

2Place the flour and potato flakes in 2 other shallow dishes.

3Heat oil in a large heavy skillet over medium-high heat.

4Dredge fillets in flour. Shake off excess

5Dip fish fillets in the egg mixture.

6Dredge the fillets in the potato flakes, completely coating the fish. For extra crispy, dip into egg and potato flakes again.

7Fry fish fillets in oil for 2 to 3 minutes on each side, or until golden brown.
