  • 1 c. dark red beets (or fresh beets)
  • 5 Tbsp. vinegar
  • 2 tsp. salt
  • 1 lb. spareribs
  • 1 small onion
  • sour or sweet cream to taste (1/4 c. or more)
  • 1 small bay leaf

Directions

    Drain beet juice into a glass and add 2 tablespoons vinegar and 1 teaspoon salt.

    Cut beets in thin strips and place in a bowl with 3 tablespoons vinegar and 1 teaspoon salt.
