- 6 medium potatoes
- 2 c. shredded Cheddar cheese
- 1/4 c. oleo
- 2 c. sour cream
- 1/3 c. chopped green onions
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. oleo
Directions

1Cook potatoes in skins.

2Cool, peel and coarsely shred.

3In saucepan, over low heat, combine cheese and oleo, stirring occasionally until almost melted.

4Remove from heat; blend in sour cream, onions, salt and pepper.

5Add potatoes, mixing lightly, and turn into a greased 2-quart casserole dish.

6Dot with 2 tablespoons oleo.

7Bake for 25 minutes or until heated through in preheated 350° oven.
