- 8 large baking potatoes, baked and slightly cooled
- 2 Tbsp. melted butter
- 3/4 lb. bacon, fried and crumbled
- 6 scallions, minced (optional)
- 3/4 c. grated Cheddar cheese
Directions

1Cut potatoes in half lengthwise, then cut each half into thirds.

2Scoop out potato pulp, leaving skin intact.

3Use potato pulp for mashed potatoes or hash browns.

4Sprinkle skins evenly with butter, then bacon and onion, if used.

5Sprinkle with cheese. Bake in a 350° oven for 15 minutes or until crisp.

6Serve hot. Makes 48 servings.
