- 12 medium baking potatoes
- 1/2 c. margarine or butter
- 2 c. shredded Cheddar or Monterey Jack cheese
- garlic or seasoned salt
- salsa
- sliced green onions
Directions

1Bake potatoes until tender.

2Cut into quarters.

3Scoop out the insides, leaving 1/2-inch thick shells.

4Brush both sides of potato skins with butter.

5Place, cut side up, on a large baking sheet.

6Bake in oven for 10 to 15 minutes or until crisp at 425°. Sprinkle with cheese and salt (optional).

7Bake 2 minutes or until cheese melts.

8Top with salsa, green onions or sour cream.
