- 1 stick butter
- 4 Tbsp. cornstarch
- 5 to 6 medium potatoes, peeled and cubed
- 1 medium onion, minced
- 1 large carrot, sliced
- 4 c. milk
- 3 to 4 slices cheese (Colby, Muenster, Monterey Jack)
- cooked bacon, crumbled or bacon bits
- 1 Tbsp. chicken bouillon
- salt and pepper
Directions

1Boil vegetables in large pot until potatoes are tender (8 to 10 minutes).

2Drain most of the water.

3Melt butter in saucepan. Slowly add cornstarch while stirring until smooth.

4Slowly add milk while stirring.

5Melt cheese into white sauce.

6Add bacon and spices.

7Let simmer on low heat until vegetables are ready.
