- 8 to 10 large potatoes
- 1 large onion, diced
- 2 Tbsp. parsley
- water
- 1/2 stick butter
- milk
- salt and pepper
Directions

1Peel and cut up potatoes.

2Cook with parsley and onion until vegetables are tender.

3Drain off water.

4Add milk and 1/2 stick of butter.

5Salt and pepper to taste.

6(Amount of milk added depends on desired consistency of soup.)

7Simmer 30 minutes or so to heat thoroughly and blend flavors.

8Serve with crackers and sliced Cheddar cheese.
