Potato Soup

Ingredients

  • 4 chicken bouillon cubes (or use McKay's chicken)
  • 3 c. boiling water
  • 2 medium onions, sliced
  • 3 Tbsp. butter
  • 4 medium potatoes, diced
  • 1/8 tsp. pepper
  • 1/8 tsp. celery salt
  • 1 c. milk
  • 1 to 2 Tbsp. fresh parsley, chopped

Directions

    Dissolve bouillon cubes in water.

    Melt butter in a large saucepan; add onions and cook 3 to 5 minutes or until transparent. Add potatoes, bouillon and seasoning to onions.

    Cover and simmer 20 to 25 minutes.

    Put mixture, half at a time, in blender and blend until smooth.

    Transfer to pan and continue with rest of mixture. Add milk and heat thoroughly.

    Garnish with parsley.
