Potato Soup

  • 2 1/2 c. pared and diced potatoes
  • 1/2 to 3/4 c. onions, sliced and separated into rings
  • 1 c. chopped celery
  • 1/2 c. grated carrot
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. parsley
  • 1 c. evaporated milk
  • 3 Tbsp. margarine

Directions

    Bring 1-quart water to a boil, add 1/2 cup diced potatoes, salt and pepper.

    Cook 10 minutes.

    After lowering heat to medium, add other 2 cups of potatoes, celery and onions.

    Cook until nearly tender; add carrots and cook 5 minutes.

    Add milk and stir over low heat until heated through.

    Add margarine and serve immediately.
