- 2 medium potatoes, pared and sliced
- 2 medium onions, chopped
- 4 ribs celery, chopped
- 3 1/2 Tbsp. butter
- 1/2 tsp. salt
- 1/2 bay leaf (optional)
- milk (for thinning soup)
- salt
- paprika
- dash of Worcestershire sauce
- boiling water
Directions

1Saute first 3 ingredients together in 1 1/2 tablespoons butter. Add boiling water to cover.

2Add salt and bay leaf.

3Boil vegetables until potatoes are tender.

4Place in blender.

5Add 2 tablespoons butter.

6Thin soup with milk.

7Add salt, paprika and dash of Worcestershire.

8When ready to serve, garnish with parsley, chives, cut up franks or diced ham or croutons.

9Serve hot or cold.
