  • 1 cube oleo
  • 1 large onion, cut fine
  • 6 to 8 medium potatoes, diced
  • 2 carrots, grated
  • 2 to 3 Tbsp. cornstarch
  • 6 c. water (just to cover)
  • 1 Tbsp. salt
  • 1/2 tsp. white pepper (optional)
  • 2 c. milk

Directions

    Melt butter, saute onions and add potatoes, carrots, water and salt.

    Cook until tender.

    Add 2 or 3 tablespoons cornstarch or flour to 2 cups milk.

    Mash potatoes and add milk.

    Cook until thickened.
