  • 2 tablespoons butter
  • 2 tablespoons flour
  • salt
  • 14 teaspoon pepper
  • 1 12 cups milk
  • 1 cup grated cheddar cheese
  • 6 medium potatoes, cooked and mashed
  • 12 cup hot milk
  • 3 tablespoons butter
  • paprika
  • parsley sprig

Directions

    Blend butter, flour, 1/2 teaspoons salt, pepper and milk in top of double boiler; cook until thickened, stirring constantly.

    Fold in cheese; stir until melted.

    Keep hot.

    Beat hot potatoes with milk, butter and 1/4 tsp salt until fluffy.

    Heap into greased, shallow casserole; form a crater in center.

    Pour cheese sauce over potatoes.
