- 1 1/2 lb. Russet potatoes, peeled and cut into eighths
- 1/2 c. light cream
- 1 Tbsp. butter
- 1/4 tsp. salt or to taste
- 2 Tbsp. fresh parsley, chopped
Directions

1Place potatoes in a steamer basket over boiling water.

2Cover saucepan and steam 10 to 15 minutes or until tender.

3Drain potatoes and mash in same saucepan.

4Stir in cream over medium heat until heated throughout.

5Add butter and season with salt and pepper to taste.

6Sprinkle with parsley before serving.
