- 24 prawns
- 3 zucchini (courgettes)
- 16 large button mushrooms
- 1 teaspoon oil
- wooden skewer
- 1 cup olive oil
- 1 garlic clove, crushed
- 1 bay leaf
- 1 tablespoon lemon juice
- 12 teaspoon lemon zest, finely grated
- salt and pepper
Directions

1Shell and devein the prawns.

2Top, tail and wipe the zucchini and slice into think rounds.

3Clean the mushrooms with a soft cloth and remove the stems.

4Put the prawns, mushroom caps and zucchini into a large bowl.

5Add the marinade and cover with cling wrap and leave for 1 hour gently stirring the mix occansionally.

6After 1 hour drain off the marinade and thread the prawns, zucchini, and mushrooms alternately onto skewers.

7(I use 3 of each thing on each skewer).

8Place skewers onto an oiled baking tray and cook in a moderately hot oven for 20-25 minutes, basting them 4-5 times during cooking with the cooking juices.

9Serve hot.
