- 2 eggs
- 1/2 c. flour
- 1/2 c. milk
- dash of salt
- 4 Tbsp. butter
Directions

1Set oven to 450° and put a large skillet (cast-iron) or Dutch oven in to heat.

2In a bowl, beat the eggs, flour, milk and salt together.

3It's important to mix all ingredients together at once, otherwise, your pancakes won't puff.

4The more air you beat into the batter, the higher it wil rise in the oven.

5When the oven is hot, toss the butter into the skillet and let it melt.

6Pour batter into the skillet and return it to the oven.

7Bake 12 to 15 minutes or until the pancake is puffed and golden.

8Cut in half and serve immediately with warm maple syrup.
