  • 2 eggs, slightly beaten
  • 2 Tbsp. liquid sweetener
  • 2 c. pumpkin
  • 1/8 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1 c. skim milk

    Combine eggs, sweetener and pumpkin.

    Blend well.

    Add salt, spices and milk; mix well.

    Pour into 8-inch pie pan.

    Bake in a moderate 350° oven 50 to 60 minutes or until done.

    Cut and serve like pie pieces, although it has no pastry crust.
