- 2 cups pumpkin puree
- 1 cup orange marmalade
- 1 teaspoon fresh ginger, grated
- 2 tablespoons lemon juice
Directions

1In a medium sauce pan bring pumpkin, marmalade, and ginger to a boil.

2Reduce heat to medium-low and simmer uncovered for 5 minutes.

3Remove from heat and stir in lemon juice.

4Transfer to a bowl, cover and cool about 1 hour.

5Makes 3 cups of spread and will keep in the fridge for up to a week.
