Pumpkin Mousse

Ingredients

  • 3 c. cooked pumpkin
  • 2 to 3 Tbsp. rum
  • 1 Tbsp. honey
  • 1 tsp. salt
  • 1/4 c. light cream
  • 2 Tbsp. flour
  • 1/4 tsp. nutmeg
  • 1/4 tsp. white pepper
  • 3 egg yolks
  • 3 egg whites, stiffly beaten

Directions

    Combine all ingredients except egg yolks and egg whites.

    Mix well and beat in egg yolks vigorously.

    Fold in beaten egg whites. Pour the mixture into a 1-quart oiled baking dish and set dish in a pan of hot water.

    Bake the mousse at 375° for 20 to 25 minutes. Serve mousse hot, with roast chicken, turkey or duck.
