Pumpkin Nut Bread

Ingredients

  • 1/3 c. cooking oil
  • 1 1/3 c. sugar
  • 2 eggs
  • 1 c. cooked mashed pumpkin (can also use can pumpkin)
  • 1/4 c. can milk
  • 1 2/3 c. All Purpose Flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. cinnamon
  • 1/2 c. nuts

Directions

    Beat oil, sugar, eggs on high speed for 3 minutes.

    Sift together dry ingredients, add and stir in remaining ingredients. Beat until batter is smooth.

    Pour into 3 x 6 or 9 x 5 loaf pan. Bake at 350° for 1 hour.
