- 1 cup cooked pumpkin, mashed
- 1 pint vanilla ice cream
- 12 cup light brown sugar
- 1 teaspoon ground cinnamon
- 12 teaspoon nutmeg
- 14 teaspoon allspice
- 12 cup cold water
- 3 teaspoons unflavored gelatin
- 12 cup boiling water
Directions

1Mix together the pumpkin & ice cream; refrigerate.

2Combine the brown sugar, cinnamon, nutmeg and allspice; mix well.

3Put to one side.

4Combine the cold water and gelatin; allow gelatin to dissolve.

5Once dissolved, add it to the sugar mixture while stirring constantly.

6Add the boiling water.

7As soon as all is dissolved, begin adding the pumpkin & ice cream mixture.

8Beat well.

9Spoon into Parfait glasses & chill.

10Top with whipped cream.

11Serve.
