  • 2 eggs, beaten
  • 1 (16 oz.) can Del Monte pumpkin
  • 1 c. firmly packed brown sugar
  • 1 Tbsp. pumpkin pie spice or 1 tsp. cinnamon, 1/2 tsp. nutmeg, 1/2 tsp. ginger and 1/4 tsp. cloves
  • 1 Tbsp. flour
  • 1/2 tsp. salt
  • 1 2/3 c. (13 oz. can) evaporated milk
  • 1 (9-inch) pastry shell, unbaked

    Combine eggs and pumpkin.

    Blend in sugar, spice or spices, flour and salt.

    Mix well.

    Add milk.

    Mix well.

    Pour into pastry shell. Bake at 425° for 15 minutes. Reduce heat to 350° and continue baking 35 to 40 minutes or until knife inserted near center comes out clean.
