  • 1 (9-inch) unbaked pastry shell
  • 1 (16 oz.) can or 2 c. pumpkin
  • 1 (14 oz.) can sweetened condensed milk (not evaporated milk)
  • 2 eggs (at room temperature)
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt

Directions

    In large mixing bowl, combine all ingredients except pastry shell; mix well.

    Pour into pastry shell.

    Bake at 425° for 15 minutes.

    Reduce oven temperature to 350°; bake for an additional 35 to 40 minutes until a knife inserted 1-inch from the edge comes out clean.
