  • 1 cup Sifted Flour
  • 1/2 cups Quick Cooking Oats
  • 1/2 cups Firmly Packed Brown Sugar
  • 1/2 cups Melted Butter

  • 15 ounces, weight Pumpkin
  • 13-1/2 ounces, fluid Evaporated Milk
  • 2 whole Eggs
  • 3/4 cups Granulated Sugar
  • 3/4 teaspoons Pumpkin Pie Spice
  • 1/2 teaspoons Salt

  • FOR THE TOPPING:
  • 1/4 cups Chopped Walnuts
  • 1/4 cups Firmly Packed Brown Sugar
  • 1 Tablespoon Melted Butter

Directions

    Crust: Combine flour, oats, brown sugar and the melted butter. Mix until crumbly, then press into a 9x13 ungreased pan. Bake at 350 degrees for 15 minutes.

    Filling: Combine pumpkin, milk, eggs, sugar, pumpkin pie spice and salt; pour into baked crust. Bake at 350 degrees for 20 more minutes.

    Topping: Combine walnuts, brown sugar and melted butter; sprinkle over the pumpkin filling. Return to the oven for another 20 minutes at 350 degrees, or until filling is set.

    Cool in the pan and cut into squares. Serve topped with whipped cream.
