- 1-1/2 lb. lean ground beef
- 1 cup tomato juice
- 8 juice
- 3/4 cup quick oats, uncooked
- 1/2 cup chopped bell pepper
- 1 egg, lightly beaten
- 1/2 cup chopped onion
- Salt and freshly ground pepper, to taste
- 1/4 cup minced parsley
Directions

1Heat oven to 350F.

2In a large bowl, combine all ingredients, mixing lightly but thoroughly.

3Press meatloaf mixture into a loaf pan.

4Bake 1 hour or until a meat thermometer registers 160F.

5Remove meatloaf from pan and let set 5 minutes before slicing.
