  • 1-1/2 lb. lean ground beef
  • 1 cup tomato juice
  • 8 juice
  • 3/4 cup quick oats, uncooked
  • 1/2 cup chopped bell pepper
  • 1 egg, lightly beaten
  • 1/2 cup chopped onion
  • Salt and freshly ground pepper, to taste
  • 1/4 cup minced parsley

Directions

    Heat oven to 350F.

    In a large bowl, combine all ingredients, mixing lightly but thoroughly.

    Press meatloaf mixture into a loaf pan.

    Bake 1 hour or until a meat thermometer registers 160F.

    Remove meatloaf from pan and let set 5 minutes before slicing.
