  • 1 medium onion
  • 1 medium bell pepper
  • 1 lb. meat (seasoned chicken, beef or sausage)
  • 8 to 10 large flour tortillas
  • cheese, grated (Colby, Monterey Jack and mild Cheddar)

Directions

    Cut onion and pepper into 1/2-inch squares.

    Cut chicken or beef into 1/2 to 1-inch strips or crumble sausage.

    Saute onion, pepper and meat.

    On 1/2 of a flour tortilla place a layer of cheese, a layer of onion, pepper, and meat and another layer of cheese.

    Fold the other half of the tortilla over to form a half moon shape.

    Cook in a lightly greased electric skillet at 300° until tortilla begins to brown, then flip over and brown the other side.

    Use a knife or pizza cutter to cut into wedges.
