- 1 medium onion
- 1 medium bell pepper
- 1 lb. meat (seasoned chicken, beef or sausage)
- 8 to 10 large flour tortillas
- cheese, grated (Colby, Monterey Jack and mild Cheddar)
Directions

1Cut onion and pepper into 1/2-inch squares.

2Cut chicken or beef into 1/2 to 1-inch strips or crumble sausage.

3Saute onion, pepper and meat.

4On 1/2 of a flour tortilla place a layer of cheese, a layer of onion, pepper, and meat and another layer of cheese.

5Fold the other half of the tortilla over to form a half moon shape.

6Cook in a lightly greased electric skillet at 300° until tortilla begins to brown, then flip over and brown the other side.

7Use a knife or pizza cutter to cut into wedges.
