Quick Chicken Casserole

Ingredients
- 3 chicken breasts, cut in half
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. Accent
- 3/4 c. self-rising pancake mix
- 1/2 c. peanut oil
- 1 (10 oz.) can cream of chicken soup
- 3/4 c. half and half
- 1 small box Minute rice
Directions

1Wipe the chicken breasts with paper towels.

2Sprinkle each half with salt, pepper and Accent.

3Place pancake mix in paper sack, then coat each piece of chicken by shaking in sack.

4Heat the oil in skillet and brown chicken.

5Cook the rice according to directions on package.

6Stir the soup and half and half into the cooked rice.

7Put the soup and rice mixture in a buttered casserole, then put chicken pieces on top.

8Bake in a 350° oven for 35 minutes.

9Serve piping hot.
