Ingredients
- 4 boneless, skinless chicken breasts or thighs
- seasoned flour
- margarine or oil
- 1 onion, sliced thin
- 1 clove garlic, minced
- 1 red pepper, cored, seeded and sliced thin
- 3 carrots, peeled and sliced lengthwise
- 2 zucchini, sliced lengthwise
- 1/4 c. white wine or sweet or dry sherry
- 1/2 tsp. basil
- 1/2 tsp. marjoram
- 1/2 tsp. thyme
- salt and pepper or seasoned salt
Directions

1Dredge chicken pieces in seasoned flour, shaking off excess. In skillet, heat fat.

2Saute chicken, turning once, until cooked through, about 10 minutes.

3Remove from pan and keep warm.

4Add more fat to pan if necessary, then add onion and garlic.

5Add pepper and saute a few minutes.

6Add carrots, sauteing a few minutes, then zucchini, until each is tender.

7Return chicken to pan.

8Sprinkle on herbs, salt and pepper; add wine and cover, sauteing for several more minutes until chicken is hot and ingredients are blended.

9A light gravy should result; add more liquid if necessary.

10Delicious with pasta or rice.
