Quick Pickled Cucumbers

- 1/2 c. white vinegar
- 1/4 c. sugar
- 1 1/2 tsp. salt
- 1/4 tsp. crushed red pepper
- 8 Kirby cucumbers (about 2 lb.)
- 1 medium size carrot
Directions

1In a 13 x 9-inch glass baking dish, stir together vinegar, sugar, salt and crushed red pepper. Cut each unpeeled cucumber lengthwise into 6 wedges.

2Place in baking dish with marinade. Peel carrot and cut crosswise in half. Cut each half lengthwise into matchstick thin strips.

3Place carrots in baking dish with cucumbers. Toss to coat.

4Cover and refrigerate at least 4 hours, stirring occasionally.

5Makes 16 accompaniment servings.
