Quick Pork Fried Rice

Ingredients

  • 1 tbsp honey
  • 2 tbsp kecap manis (sweet soy sauce)
  • 1 1/4 lb pork fillets, thinly sliced
  • 2 tsp peanut oil
  • 2 None large eggs, lightly beaten
  • 1 None medium carrot, cut into matchsticks
  • 1 None medium red pepper, seeded, thinly sliced
  • 1 lb cooked white long-grain rice
  • 8 None spring onions, thinly sliced
  • 3 oz bean sprouts
  • 2 tbsp soy sauce
  • 2 tbsp char siu sauce

Directions

    Whisk together honey and kecap manis. Add pork and turn to coat.

    Heat 1 tsp oil in a wok. Pour eggs into wok. Cook over medium heat, tilting pan, until almost set. Remove omelette from wok and roll up tightly. Slice thinly.

    Add remaining oil to wok. Stir-fry pork, in batches, until cooked through. Set aside. Stir-fry carrots and sliced pepper until just tender. Return 1/2 the omelette to the wok along with rice, pork, onions, bean sprouts, soy sauce and char siu sauce. Stir-fry until hot. Remove from heat and sprinkle with remaining omelette.
