Ingredients

  • 1 cup Water
  • 1/2 cups Dry White Quinoa
  • 1 can 14 Oz Can, Green Beans, Drained
  • 1 can 14 Oz Can, Yellow Wax Beans, Drained
  • 1 can 19 Oz Can, Red Kidney Beans (rinsed And Drained)
  • 1 can 19 Oz Can, Chickpea (garbanzo) Beans Rinsed And Drained
  • 1 cup Red Onion, Diced
  • 1 Red Pepper , Stem And Seeds Removed, Then Chopped
  • 1/2 cups Sundried Oregano Salad Dressing (or Italian)
  • 1/2 cups Finely Chopped Parsley
  • Salt And Pepper

Directions

    Bring water to boil in a small saucepan then stir in quinoa. Cover the pan and simmer on medium-low heat for 15 minutes or until liquid is absorbed. Remove pan from heat and allow quinoa to cool.

    Combine remaining ingredients (except salt and pepper) in a large bowl. Stir in quinoa.

    Refrigerate for 1 hour. Season to taste with salt and pepper.
