- 1 c. mashed potatoes
- 2 pkg. dry yeast
- 1 1/2 c. warm water
- 1 1/2 tsp. salt
- hot oil for frying
- 1 c. sugar
- 2 eggs, well beaten
- 2/3 c. soft shortening
- 5 1/2 to 7 c. sifted flour
Directions

1Mix well mashed potatoes, yeast, warm water, salt and sugar. Let stand for 20 minutes.

2Add well beaten eggs and shortening to first mixture and beat well.

3Add flour enough to handle easily. Knead.

4Let rise double in bulk.

5Roll out on floured board.

6Cut out doughnuts.

7Let rise double again.

8Fry in hot oil.

9Drain on rack or paper towels.

10Sugar or glaze while still warm.
