Raisin Salsa Verde

  • 1/4 cup golden raisins
  • 2 tbsp Sambuca liqueur
  • 1 cup chopped parsley stems (I used Italian) cleaned
  • 1/2 cup extra virgin olive oil
  • 1/2 to 3/4 teaspoon kosher salt
  • 1/2 tsp pepper
  • 2 tsp lemon juice
  • 1 tsp red wine vinegar
  • 1 tbsp chopped garlic

Directions

    Place the raisins and Sambuca in a small pot over medium heat and reduce by half.

    Add to a food processor or blender along with the remaining ingredients.

    Puree until fine.

    Serve at room temperature.
