Raspberry Chicken(Makes 4 Servings)

- 2 large chicken breasts, skinned, boned and halved
- salt to taste
- 2 Tbsp. margarine or butter
- 1/4 c. finely chopped onion
- 3 Tbsp. raspberry jelly
- 3 Tbsp. white vinegar
- 1 Tbsp. brown sugar
- 1/4 c. heavy cream
Directions

1Cut chicken breast halves in half lengthwise to make 8 pieces. Lightly salt chicken.

2Melt butter in a 10-inch skillet.

3Add chicken; cook over medium heat for 5 minutes.

4Turn chicken.

5Add onion around edges of skillet.

6Cook 5 to 10 minutes, or until chicken is done.

7Transfer chicken to a platter; keep warm.

8Add jelly, vinegar and brown sugar to mixture remaining in skillet.
