Raspberry Cream Cheese Bars

  • 3/4 c. butter, softened
  • 1 c. packed brown sugar
  • 1 1/2 c. quick cooking oats
  • 1 1/2 c. flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 pkg. (one 8 oz. and one 3 oz.) softened cream cheese
  • 1/2 c. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 (18 oz.) jar red raspberry preserves

Directions

    In mixing bowl, cream butter and brown sugar.

    Combine oats, flour, baking soda and salt.

    Add to creamed mixture and mix well. Press 3/4 of mixture into greased 9 x 13 pan.

    Bake at 350° for 11 to 13 minutes just until edges begin to brown.

    Meanwhile, in a small mixing bowl, beat cream cheese and sugar.

    Add eggs and vanilla; mix well.

    Spread over crust.

    Drop preserves by spoonfuls over cheese mixture.

    Spread evenly.

    Sprinkle reserved crumbs on top and bake 25 to 30 minutes until set and edges are golden brown.
