- 1 refrigerated pie crust
- 2 cups raspberries
- 1/4 cup granulated sugar
- 2 tablespoons flour
- 2 tablespoons ground hazelnuts
- 1 teaspoon vanilla extract
- 1 egg lightly beaten
- 2 tablespoons demerara sugar
- vanilla ice cream to serve
Directions

1Preheat the oven to 400°C. Line a baking sheet with parchment paper. Place pie crust on pan.

2Mix raspberries, granulated sugar, flour, hazelnuts and vanilla in a medium bowl. Spoon raspberry mixture into center of crust, leaving a 2 inch border. Fold edge of crust up over filling, pleating the crust as needed. Brush pie crust with egg, then sprinkle raspberry mixture with demerara sugar.

3Bake for 25 minutes or until golden. Serve warm with ice cream.
