Raspberry Lemonade Mold

  • 1 (10 oz.) pkg. frozen raspberries, thawed
  • 1 (6 oz.) pkg. raspberry gelatin
  • 2 c. boiling water
  • 1 pt. vanilla ice cream, softened
  • 1 (6 oz.) can frozen pink lemonade concentrate
  • 1/4 c. pecans or walnuts, chopped

Directions

    Drain raspberries and reserve the syrup.

    Dissolve gelatin in boiling water.

    Stir in softened ice cream.

    Add reserved raspberry syrup and lemonade concentrate, blending until smooth. Chill until partially set.

    Fold in raspberries and pecans.

    Pour into 6-cup ring mold or another attractive mold.

    Chill overnight until set.

    After molding, fill the center of the ring with fresh blueberries or grapes.
